As for the chicken, I sprinkled blackened seasoning on both sides and then pan fried them in olive oil. If this works for you, awesome. I should have used the perfect chicken method (cook a couple minutes on each side then bake at 350 degrees for 25 min and then rest for 5 min) because hat works best for me. I struggle with pan frying chicken because it never cooks in the middle for me… So my chicken was a little overdone, but flavor was great! So, assuming your chicken is cooked well, this would be a nice fast option for you… Enjoy!
