Good afternoon all. I hope you all had a great Memorial Day weekend and had our military on your mind. Because t was a holiday weekend, I threw throw together with just a few things I picked up from the store. The best part about these nachos is that you can add or take off whatever you like (which is why there are 2 pictures, the one with the avocado and tomatoes is mine).
First, for the chicken, I used McCormick’s taco seasoning and rubbed it all over the chicken breast. In a Dutch oven, I added some olive oil and heated it over medium heat. I added the chicken and browned it for about 3 minutes each side. Then I put it in the oven at 350 degrees for 25 minutes. Once you take it out, let it rest for 5 minutes, the shred with 2 forks. I only used 1 chicken breast and had leftover from the 2 of us. Now start with a layer of chips, then some cheese (I used cheddar and jack mixed), then chicken and onion (if you like). We microwaved that for about 45 seconds till the cheese was melted. Then top with your stuff. I added avocado, tomato, cilantro, and my special sauce. The sauce is sour cream, ketchup, and green taco sauce all stirred together. All I have to say is don’t knock it till you try it… It Rocks!
