Heat 2 tbsp peanut oil in a large skillet. Add about 1 lb ground turkey and brown it, breaking it to smaller pieces while you do. Drain the meat and wipe out the skillet with a paper towel. Add the drained meat back to the skillet and add the corn off 2 cobs (cooked). Stir that around and then add 1/4 tsp (maybe bump this to 1/2 or 3/4), 1/4 C soy sauce (low sodium if you have it), and 1 tsp balsamic vinegar. Stir that around and check the flavor, if it still needs something, let me know what you try and if it works. At this point, I added in diced water chestnuts, but next time I would add more stuff, maybe diced bell peppers or something like that. Stir it around and then add in chopped green onion. Stir and serve with washed romaine lettuce (can use bib or iceberg lettuce too).
Enjoy topped with avocado and more soy sauce (or maybe teriyaki or something).
