This is a nice throw together and bake kind of meal, but a few notes to keep in mind. #1 my potatoes are too big and so they did not all cook through. #2 The top layer of green beans always gets overlooked, so I just throw those out. Next time I’ll try covering them with foil to see if that helps. #3 despite the first two, it’s still yummy!
First, preheat the oven to 350 degrees. Grab a 9×9 if you are doing dinner for 2 or a 9×13 pan if you are ding dinner for 4 ish. Place your chicken breasts down the middle, sprinkling each with Italian dressing seasoning mix (about 1/2 pack for 2 or 1 package for 4). Then place cleaned and cut green beans on the right side of the chicken and cleaned and cut white or red potatoes on the left side (remember to cut them small so they cook through). Sprinkle the veggies with the Italian dressing seasoning mix (1/2 pack for 2 or 1 pack for 4). Top with some butter (a couple or a few pats of butter over each item, chicken, green beans, and potatoes). Bake for 1 hour (covered with foil if you dare), then let stand 5 minutes before serving.
