Hey everyone this is another one from Pioneer Woman Dinnertime, and one of the simplest ones in the book. I tweaked it a bit because I have a terrible time cooking chicken in a skillet so I did it perfectly.
Preheat the oven to 350 degrees. Salt and pepper your chicken on both sides. Heat some olive oil in a Dutch oven over the stove. Brown the chicken on both sides, about 2-3 minutes per side, then bake for 25 minutes.
While the chicken is cooking, cut up your lettuce (I used romain), celery, red onion, and carrots. Some green onions or a hard boiled egg would also be good additions.
When the chicken comes out of the oven, pour 1/2 C (or the whole small bottle) Frank’s red hot Louisiana hot sauce over it and turn the chicken to coat it. Let it rest for about 5 minutes. Then cut the chicken into bit size pieces and put back in with the sauce. Stir it around and start building your salad.
Lettuce, veggies or stuff, blue cheese crumbles, and then dressing (I like buttermilk ranch, but blue cheese is good too, and Hubby just likes more hot sauce). We like our salads mixed up, so we put all our stuff in a large ziploc bag and seal it with air inside, then shake it all up and pour it into your bowl.
