I knocked this one out on Sunday after grocery shopping. Worked out great and tasted good too!
Start by browning about 2 lbs of ground beef (I used 93/7) sprinkling on 1 3/4 pkg of McCormick taco seasoning (or 7 tbsp if you buy the jumbo one from Costco like I do) while its cooking. Drain the meat when it is browned.
While hat is cooking, in a medium bowl, mix 8 oz room temperature cream cheese, 1 C sour cream, 1 tbsp of taco seasoning, and a 14 oz can of Refried Beans (I always get the vegetarian o Es because that’s what my mom always bought, but totally up to your preference) then set aside. Shred 2 C mozzarella and 2 C sharp cheddar cheese and then mix them together (I did this by sealing them in a large ziploc bag with air and shaking it a lot). Now grab the rest of the stuff you need to build your lasagna: 32 oz salsa, 2 smal cans of sliced olives, 16 oz uncooked lasagna noodles (not the fast boil ones), 1 can Mexicorn (optional and we left it out because hubby doesn’t like canned corn… We didn’t miss it at all!) and 1 bunch of green onions sliced.
In the crock pot, start with a liner. Spoon just enough salsa on the bottom to coat it, then top with a layer of noodles (note you will have to break them to fit… Just go with it).
Layers: 1/3 bean mixture, 1/3 beef, 1/3 corn if you use it, 1/4 olives, 1 C cheese mixture, 1/4 of remaining salsa, then another layer of noodles.
Repeat these layers 2 more times (3 times total). Finish by covering the last layer of noodles with the remaining salsa. Cover and cook on high 3 1/2 – 4 hours. Minutes before serving (I gave it 5 minutes), cover with remaining cheese, olives, and all the green onions. Cover and let the cheese melt while you cook the beans.
Empty the can into a pot. Heat over medium low heat stirring here and there. When they are heated through, add some cheddar cheese and cover till it melts.
Serve the lasagna with a big spoon and the beans with a regular spoon and enjoy!
