Preheat the oven to 375 degrees and trim the excess fat off about 1 1/2 lbs of chicken thighs. Line a baking sheet with parchment paper and set aside. Grab 3 shallow bowls for your dredging stations. In the first one, put 1/2 C flour, and salt and pepper to taste (about 1 tsp or so each). In the next one, whisk together 1 egg, 1/8 C milk, and 1 1/2 tsp hot sauce (I used tapatio). In the last one, 3/4 C panko, 1/2 tsp paprika, 1 1/2 tsp Cajun seasoning, salt and pepper to taste (about 1/2 tsp each), and 1/8 C peanut oil (I mixed all the dry stuff together then added the oil and mixed it again). Note to self: there was barely enough panko mix for the chicken, so I might bump up the recipe for this a little next time just to be sure they are all coated perfectly, but this amount did cover them all well.
Now for the process. Dredge both sides of chicken (1 at a time) in the flour mixture, then liquid mixture, then panko mixture pressing to make sure it sticks, then put on thhe parchment lined baking sheet. Repeat for each remaining chicken piece left. Bake for 45 minutes or till nice and brown.
Once done, serve with store bought potato salad (or cole slaw) on the side. Enjoy!
