This gem was found on Pinterest at http://homeiswheretheholmansare.blogspot.com/2010/08/lasagna-roll-ups.html?m=1. The salad I did was super simple with just chopped up iceberg lettuce, carrots, green onions, and topped with ranch before serving it. Here is how I made the rolls…
Preheat the oven to 350 degrees. Grab a large pot, fill pretty full with water, and heat over high heat to boiling. While that is coming to a boil, chop 1/2 an onion and 1 garlic clove. In a skillet, heat 1 tbsp olive oil over medium high heat. Add the onion and garlic and sauté a couple minutes. Add 1/2 lb lean ground beef (or turkey if you want). Brown the meat and make sure it is all mixed well. Drain the mixture (leave some juice behind).
Once your water is boiling, salt liberally and add 8 lasagna noodles. These should cook for about 8 minutes, till al dente so they are easy to roll. Once done, drain and let sit till the sauce is done.
Back to the meat mixture (in the skillet), add 1 can crushed tomatoes and stir to combine. Reduce heat to low and simmer 15 minutes.
While the sauce is simmering, work on the cheese stuff. In a small bowl, lightly beat 1 egg. Add 1/2 C ricotta cheese, 1/4 C Parmesan cheese, 3/4 tsp oregano, and 3/4 tsp basil. Mix well and set aside.
Once the 15 minutes is up, add 3/4 tsp oregano, 3/4 tsp basil, and 1/2 tsp crushed red pepper (they say to add half to the sauce and sprinkle the her half on top, but I just added it all into the sauce because I didn’t think I could handle it if I got a bit from on top). Stir it all up and get ready to make the rolls.
Spray a baking sheet with cooking spray and spread a thin anount of the sauce over the bottom of thhe sheet. I used a cutting board to build my rolls. Lay out the noodle, add a spoon full of the cheese mixture, then a spoon full of sauce, and roll it up. Place seam side down on he baking dish. Repeat for the rest of the noodles. Top each roll with another spoonful of sauce and a good amount of Mozzarella cheese (and a sprinkle of the red pepper flakes if you only did half in the sauce). Bake for about 20 minutes, till the cheese is melted and bubbly.
Serve it up with the salad on the side, and options for dressing if you have them. Enjoy!
