Start with a 3 1/2 lb beef roast (or a little less or a little more). Set that in the crock pot (cut it if you need to make it fit). In a small bowl, mix together 1 1/2 C ketchup, 1/4 C packed brown sugar, 1/4 C BBQ sauce (yes we used sweet baby rays as always), 2 tbsp Worcester sauce, 2 tbsp Dijon mustard, 1 tsp liquid smoke (optional, I used it and made the whole house smell like BBQ… Yum!), 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder. Pour that over the meat, put the lid on, and cook on low for 8-10 hours.
When you get home, preheat the over for the Oreida frozen Crispy French Fries and bake according to package. Open the can(s) of green beans, drain it the liquid, pour into a pan, and add some butter. Heat over low heat till butter is melted and green beans are hot throughout. Put on simmer and stir occasionally.
While the fries are baking, take the meat out (careful as mine was literally falling apart on me) and shred it with 2 forks, careful to separate out the fat to discard. Put the shredded meat back into the crock pot till ready to serve. Slice some red onion for topping. Toast your buns if you like it that way. We did ours with a little butter on a griddle pan.
Layer as follows: bottom bun, beef mixture, onion slices, top bun (add mustard if you like before top bun). Add French fries and green beans on the side, with a little ketchup for the fries, and enjoy!
