This one was really easy and really tasty! I found that I like my cilantro lime rice better than Ree’s so I substituted my recipe. This one took a bit of timing, so i’ll let you know how I worked it and it all worked out pretty good.
Start by cutting the steak into bite size pieces and put them into a bowl (we used a rib eye and only needed 1 steak for the two of us to share (he had more than me but I was still full). in a small bowl, mix together 1/4 tsp salt, 1/4 tsp pepper, 1/2 tsp ground cumin, and 1/2 tsp chili powder. Sprinkle that over the meat and toss to coat, then set aside.
Prepare the rest of the veggies. Chop 1/2 of a red bell pepper, 1/2 of a yellow bell pepper, 1/2 of a red onion, and 1/2 of a jalapeno seeded and finely diced (recipe also calls for zucchini and yellow squash which my hubby doesn’t like so I left them out).
Now lets start the rice. Add 1 tbsp. olive oil to a large skillet and heat over low heat. add 3 cloves of garlic finely chopped and 1 C long grain rice. Sauté for about 2 minutes stirring frequently, then add 2 C chicken broth, 2 tbsp. fresh squeezed lime juice (or the juice o 2 limes), and 1 tsp salt. Stir to combine, then bring to a boil. Cover, reduce heat to low, and cook 15 minutes.
While that is covered, we will start working in a different skillet. In a medium or large skillet, heat 1 tbsp. olive oil and 1 tbsp. butter till melted. Add steak to the skillet and cook a little bit all around till they are cooked to your liking (we like medium and this took about 5 minutes or so. Remove the steak to a plate and keep warm. Add the veggies to the same skillet (bell peppers, jalapeno, and onion). Stir around and cook till tender.
Chop 1 bunch of cilantro and stir it into the rice when it is done simmering. Now you are ready to build your bowl. Start with the rice, then veggies, then steak, and finally top with some guacamole (or avocado if you want to be lazy), sour cream, pico de gallo or salsa, or some taco sauce if you like. Ree also adds black beans, but hubby is not a fan, so I left them out, but they would be a nice addition. Enjoy!
