This is a pretty tasty one that we found to be super easy and fast too. From start to table, it was only about 20 minutes. I love Emeril and here is where I found it http://www.foodnetwork.com/recipes/emeril-lagasse/pan-roasted-pork-chops-recipe.html.
Preheat the oven to 375 degrees. Start by making the seasoning that Emeril calls “Essence”. I made a half recipe and had plenty for keeping in order to use for next time. Luckily I finished off the paprika, so I had a container to put the extra in. If you want to make enough for just 2 pork chops, you might want to cut this into 1/4 or less. Mix together 1 1/4 tbsp. paprika, 1 tbsp. salt (I might cut this down next time as it was pretty salty to me), 1 tbsp. garlic powder, 1 1/2 tsp pepper, 1 1/2 tsp onion powder, 1 1/2 tsp cayenne pepper, 1 1/2 tsp dried oregano, and 1 1/2 tsp dried thyme.
Now let’s get cooking! Sprinkle the seasoning over both sides of the pork chops, rubbing a little in so it gets a good flavor. In a medium skillet, heat 1 tbsp. olive oil over medium high heat. Place the pork chops in the skillet and cook for about 3 minutes on each side. Place the skillet in the oven and bake to finish cooking for about 10 minutes or till the center of the pork is at 150 degrees.
Once they are baking, make the Herb Stuffing according to the package. It should finish about the same time as the pork.
Remove the pork from the oven and fluff the stuffing. Serve it up and enjoy!
