Sorry for the ugly pan, but it still works, and is great for things I know are going to be a pain to get off. This was one my husband found on Pinterest and forwarded to me. It was really tasty, but when I read the recipe I didn’t think it would make enough, so I doubled it, and probably could have fed an army, and does not re-heat well. So, note to self, next time I will make a single batch, and will probably be perfect for the two of us. Preheat the oven to 375 degrees. in a medium saucepan, fry up some bacon (4 slices) till crisp. Remove to a paper towel lined plate to drain. In the pan with all that yummy bacon grease, brown 1/2 lb ground beef with 1/2 a small onion diced (we used the other half for topping), and salt and pepper. Once browned, drain the fat off (since you already cooked all that flavor into the meat, you don’t need the extra grease that will just make the chips soggy, and no one likes soggy nachos!). Stir 1/8 C barbecue sauce (we used sweet baby rays… of course) into the meat mixture. Line a rimmed baking sheet with 1 layer of tortilla chips (with good coverage but not too much overlap). Sprinkle 1 1/2 C shredded cheddar cheese over the chips, top with half of the beef mixture, then half the bacon (chopped), then (using a baggie with 1/3 C bbq sauce if its not the squeeze bottle kind) drizzle about 1/6 C bbq sauce over the whole thing. Repeat layering with chips, then cheese, then meat, then bacon, then the rest of the sauce. Bake for about 8-10 minutes. While that is cooking, I cut up 1 bunch of green onions, and a bunch of lettuce because that’s what I like on my burgers, but add whatever you like. The site suggests green onions, tomatoes, and lettuce. Your choice… your nachos!
