This is a quick throw together meal based on what I already had in the cupboard. All I had to go get was the cilantro. Score! I also wanted to make it quick, so I did the chicken more like a stir fry style rather than the perfect chicken method.
I started by chopping about 1/2 a white onion and 1 bunch of cilantro. Then I carefully sliced 1 chicken breast into pretty tiny bite sized pieces (this was for 2 reasons, 1 I wanted it to cook fast, 2 we had little tortillas so it made sense). I then heated a medium skillet over medium heat, added the chicken, sprinkled some taco seasoning over it and let it start cooking. I stirred it regularly so that it would cook through and not burn any of the little pieces. This took about 5 minutes. Once the chicken was done, I turned off the heat, and started on the tortillas. These I just heated over my gas stove till they had the nice char marks you see and then served them up. Those material tortilla warmers they sell at grocery stores for about $4 are great for keeping these warm and not letting them get soggy if you are not serving immediately. Otherwise, serve them immediately topped with chicken, taco sauce, tapatio, onion, cilantro, and whatever else you like on your street tacos. Enjoy!
