Found this gem online and got sucked in by the site’s name… way to go! I think my sister-in-law would love it too! Since it is just the 2 of us, I only made a half recipe and put it in a 9×9 dish which worked out perfectly, but we are saucy people, so I made a whole recipe of her sauce. That’s how this is going to be described, just want you to be aware. Note to self: to make this easier, just buy a good jar of alfredo sauce and skip making your own.
I started by cooking the chicken perfect style with just salt and pepper as seasoning. This made it easy to shred and was perfect for the dish. That means I preheated the oven to 350 degrees, heated a tablespoon ish of olive oil in a dutch oven, seasoned the chicken breast with salt and pepper on both sides, browned it in the dutch oven for about 3 minutes per side, then baked it for 25 minutes. Once that was complete, I let it sit for 5 minutes, then shredded it. While that was cooking, I cooked about 1/2 a box of pene noodles in boiling water on the stove. When they were al dente, I drained the noodles and set aside. Once the noodles were done (chicken still cooking at this point), I started on the sauce.
I minced 4 large cloves of garlic, and prepared the parmesan cheese for shredding (I didn’t measure this part, I just shredded till it looked good to me). Heat 1 tbsp. olive oil in a large skillet, add garlic and stir till fragrant. Sprinkle 3 tbsp. flour and stir it in. Cook a minute to cook the flour taste out. Slowly add 1 C chicken broth whisking constantly so you don’t get lumps and it gets smooth. Whisk in 1 C milk (I used 2% because that is what we drink). Bring to a simmer and let cook another minute so it gets a little thicker. Stir in 3/4 C Parmesan cheese, 1/2 tsp salt, and 1/2 tsp pepper (I bumped pepper up from 1/4 tsp because we like it). Once cheese is melted, remove from heat and set aside.
At some point, your chicken was done, and you took it out of the oven, and let it rest for 5 minutes which is probably done now. Bump your oven up to 375 degrees and shred your chicken. Add the chicken and noodles to the sauce. Toss to coat it all. In a 9×9 baking dish, add about 1/2 the mixture, sprinkle about 1 C Parmesan cheese on top, then layer the rest of the mixture, and top with 1/2 C Parmesan cheese (I used another 1 C because I like the extra cheese especially on top). Bake for 20-25 minutes, till golden on top.
Serve immediately and enjoy!
