I found this one on Pinterest, and thought it would be a nice one to try. My hubby and I are not big on Stuffed Bell Peppers, but figure it would be something new and should go for it. I prepared for this one by cooking rice the night before, so that this could really be a quick meal. The night of, I started by prepping what I needed. Dice 2 green bell peppers, dice 1 white onion, pull 1 lb of ground beef out of the refrigerator, and shredded 1 C cheddar cheese (might do more next time, but up to you).
In a large skillet, brown your ground beef, chopping it into small pieces. While that is working, grab a can of diced tomatoes, a can of condensed tomato soup, Worcestershire sauce, and your cooked rice (from the night before or whenever it finishes). Stir your meat to make sure it gets browned through, and while that is working, I opened my cans. Add onions and bell peppers to the beef and stir together. Sautee till softened, then drain the meat (I used 93/7 meat so there was not much to drain off). Return the mixture to the skillet and season with salt and pepper to taste. Return to the stove over medium heat, and add the can of diced tomatoes (with juice), condensed tomato soup, 2 tsp Worcestershire sauce, and the cooked rice. Stir to combine. Top with cheese over the whole thing, then cover with a lid and let the cheese turn to melty goodness.
