So we decided to try Hello Fresh since we got a discount, and this was our first meal. I was concerned about the dressing, but it was really good with the steak! My hubby is not a fan of anything in the succotash, but I enjoyed it and so did my mother-in-law. So here goes.
First wash and dry all the fruits and veggies and let’s get them prepped. Dice 1 red onion, cut 1 zucchini into 1/2″ cubes, trim the Woody bottoms off about 6oz of asparagus (they sent small ones, but I usually see bigger ones at the store, so cook times may change if they are bigger and thicker), zest 1 lemon (about 1/2 tsp), cut lemon in half, and finally mince chives (a small bunch) and mint leaves (about 2 stems worth of mint leaves). Set some extra chives and mint leaves aside if you want to use them as a garnish.
Make the herb dressing by mixing the minced chives, mint, a large drizzle of olive oil, salt and pepper to taste. Now we start the succotash… Heat a drizzle of olive oil in a large pan. Add the onion and cook a few minutes till softened, then add in zucchini. Cook until lightly browned and softened. Season with salt and pepper, then remove from heat and set aside. While that is cooking, dry your steaks with a paper towel, and salt and pepper both sides.
Once you set the succotash aside, heat a drizzle of olive oil in a different large skillet (I used a cast iron one for this for extra flavor), then add steaks to the pan and cook for about 4-7 minutes per side till cooked to your liking (the steaks we got were pretty thin, so we only did about 2 1/2 to 3 minutes per side). Once they are cooked to your liking, remove to a plate, and set aside to rest.
Now, we finish the succotash. Bring the succotash pan back onto the heat, then add 4 oz peas (small ones are better) and asparagus. Cook tossing till asparagus is softened, season with salt and pepper, then remove from the heat. Squeeze 1/2 the lemon juice over it and add a pinch of zest, then stir to mix thoroughly.
Now, for plating. Make a nice bed of the succotash on the plate, thinly slice the steak and place carefully on top of the succotash bed, then add the herb mint dressing over the steak. Add garnish if desired. Serve it up and enjoy!
