This was our 4th meal from Hello Fresh. I’ll be honest, I was not looking forward to this because I’m not a fan of sausage, but it was actually pretty good. I left the zucchini off of my husbands pizza and he liked it too. I would definitely double the cheese if I made this again, but overall it was still good.
Wash and dry your zucchini, then slice it into 1/2″ thick rounds (I would dice this next time so that you can get a bite each time, but it looks prettier this way). Turn on the broiler to hi. Pick 1/4 oz oregano leaves off the stems and roughly chop the leaves (discard the stems). Toss the zucchini in a drizzle of olive oil, salt, pepper, and 1/2 tsp Italian seasoning. Spread on a baking sheet and broil for about 5-7 min or till browned. Remove from the broiler and set aside, then adjust the temperature to 450 degrees.
Heat a drizzle of olive oil in a large skillet and cook 9 oz of sweet Italian chicken sausage (removed from casings) and 1/2 the oregano, breaking the sausage into smaller pieces and browning till cooked through.remove the pan from the heat and set aside.
Assemble the pizzas by spraying another cookie sheet with PAM. Place 2 flatbread pieces next to each other on the baking sheet. Salt and pepper them, then spread a thin layer of crushed tomatoes on each. Sprinkle with salt, pepper, and 1/2 tsp Italian seasoning. Top with 1/2 C of mozzarella cheese split between the 2, or on each of you are like me and like cheese. Top then with the sausage and zucchini. Bake the pizzas for about 4-6 minutes, till the edges are golden brown and the cheese is melted.
When done, remove from the oven, top with the other half of the oregano, then slice and serve it up. Enjoy!
