Start by peeling and chopping 5-6 cloves of garlic, washing 2 handfuls of spinach, juicing 1 lemon, and dicing 3 large tomatoes (or use canned diced tomatoes if you are like me and accidentally used your tomatoes for a different recipe).
In a large skillet, heat 2 tbsp olive oil over medium-high heat. Season 2 chicken breasts with salt and pepper on both sides, then place them in the skillet. Cover and let cook about 4 minutes. Turn them over, sprinkle 1/8 tsp cayenne pepper per chicken breast (if you want you can skip this), add 1 tbsp olive oil, cover and cook another 4 minutes.
Turn the heat to medium low, hen add the garlic. Let cook about 30 seconds till fragrant. Add the tomatoes (since mine were canned, I waited till the last minute and then added them so they just warmed up since they didn’t need to cook, Fresh would have been better), 1/3 C balsamic vinegar, and 1/3 C water. Cover and simmer for another 5 minutes.
I removed the chicken breasts to a plate, then added the lemon juice and 1 tbsp butter to the pan. Stir to combine and melt the butter, then serve the spinach as a bed for the chicken, topped with the sauce and tomatoes over it all. Enjoy!
