I cut broccoli into florets and shucked 2 corn on the cobs when I got home from work before the gym. On the way home from the gym we stopped by the grocery store and bought their hot out of the oven rotisserie whole roasted chickens.
When I got home, while my hubby took his shower, I wrapped each cob in seran wrap and cooked it in the microwave for 3 minutes. While that cooked, I put the broccoli in my Tupperware steamer with a little water and butter. When the corn was done, I put that in the microwave and cooked it for about 3 minutes. Leave kids on and corn wrapped till you are ready to eat. While those are cooking or resting, start breaking down the chicken. I started by removing the rope tied around the legs and wings. Careful to remove all bones, remove the meat from the legs, then wings, then thighs. The rest of the meat is on the breast which I used a knife to cut like I would a turkey. Peel the rest of the meat off that you couldn’t get with a knife.
Serve up the chicken with broccoli and corn on the side. We felt the chicken was a little dry, so BBQ sauce solved that issue. I’m planning to use the left over chicken for another meal in a few days, so stay tuned for that. Enjoy!
