This one turned out really tasty in my opinion, but not so much in my husband’s. Then again, I like Mexican pizza’s from Taco Bell, and he is not a fan, so I should not be surprised. I started by grabbing all the stuff I needed: Left over rotisserie chicken (#165), left over enchilada sauce (we made #72 again last week), 1 roma tomato, 4 flour tortillas (taco size, not burrito size), Pam spray, green onions, a can of refried beans, a jar of salsa (but you only need 1/4 C), and shredded Mexican blend cheese. Preheat your oven to 350 degrees and pull out a baking sheet.
Since I am only making half the recipe, I put about half the refried beans in a small bowl and heated it in the microwave for about 30 seconds. Then I mixed 1 C of chicken with the salsa and heated that in the microwave for about 30 seconds, stirred it, and it needed another 30 seconds. While those were cooking, I sprayed both sides of a tortilla and started cooking that in a skillet over medium high heat till a little toasty on each side, then set on a cookie sheet. Repeat with the 2nd tortilla. By now, you should have 2 toasty tortillas, hot beans, and hot chicken. Start your next tortilla (spray then toast in the skillet) and spread about 1-2 tbsp. of the beans on each of the tortillas you already have toasted, then top with chicken (I also added some diced onion, but that was sporadic and I already had it chopped up). When the next tortilla is done on both sides, set on top of the chicken like a sandwich. Repeat with the last tortilla. Top both with about 2 tbsp. of enchilada sauce per tortilla, spread out thin. Top that with some cheese (about 1/2 cup or a little more). I did not top with the tomato or green onion at this time, but I will next time so it sticks better. Then put it in the oven for about 5-7 minutes to melt the cheese.
Cut into quarters and serve immediately with diced tomatoes and green onions as a garnish. Enjoy!
