This is one from my childhood. Super simple to put together, but takes a while to cook. It could use some more spices to give it some extra flavor, but it’s good just he way it is. It’s normally served over rice, but I was just not in the mood.
Preheat your oven to 350 degrees. Add 1 can tomato soup to a glass loaf size dish. Then fill the empty soup can half full with water and add that to the soup. Add salt and pepper to taste, and stir to combine. Cut the fat off of 2 pork chops (about 3/4″ thick). Add the pork to the tomato mixture and bake for 1 hour.
With about 10 minutes left, cook stuffing according to package. Heat 1 1/2 C water and 4 tbsp butter to a boil. Add stuffing mixture and stir to combine. Remove from heat, cover, and wait 5 minutes. Fluff with a fork before serving.
Serve up the pork chop, topped with some extra sauce, and the stuffing on the side.
Note: if you are going to do this with rice, rinse your rice and put in the rice cooker and start it about 20 minutes before the pork is done. Then use the rice as a bed for the pork and sauce. We usually do a side of broccoli or green beans with it.
