This could use some improvements, so I will state those as I go through, but overall was tasty. We found it here http://onelittleproject.com/easy-caprese-calzones/. It was super fast and very easy to do with very few dishes which always makes me happy.
Start by preheating your oven to 425 degrees. I made 2 caprese and 2 pepperoni, olive, and onion calzones. For what I made, I sliced 1 Roma tomato into 1/4″ slices, a bunch of basil leaves into strips, 1/2 a ball of mozzarella (only needed 4 oz) cut into cubes, dice about 1/2 C onion, open a can of sliced olives, and open a packet of pepperoni. Open a can of Pillsbury pizza dough. On a lightly floured surface (or parchment like I did), roll it out a little thinner. Slice it into 4 equal rectangles. For the caprese ones, line up half the tomato slices in the middle, top with 1/4 of the cheese, then sprinkle 1/3 of the basil on top. Carefully fold the sides together to form a seam at the top, then pinch the ends. Place seam side down on a wire rack over a rimmed baking sheet. Repeat for the second caprese calzone. For the others, line up 1/4 of the cheese each, top with pepperoni, then some olives, and half the onion. Add a little basil, then fold and make the seam like you did with the others. Once all are ready, bake for 11-14 minutes. When I did it, I put them on parchment and the bottom got soggy and did not cook through. I think if it was done on a wire rack, the heat would get all the way around and cook more evenly.
While those are cooking, put some pizza sauce in a couple small bowls. Heat in the microwave (or over the stove) till hot, about 30 seconds to a minute.
Once the calzones are ready and the sauce is hot, serve them up and enjoy!
