Start by making your Au Gratin potatoes according to the box (I like Betty Crocker). While these are cooking for 25 minutes, make your steaks.
Now cut a 1 lb skirt steak into 4 pieces. Peel, lightly salt, and mince 6 cloves of garlic. Pat your steaks dry on both sides, then season with salt and pepper. Heat 2 tbsp canola oil over medium high heat. Once shimmering (which tells you it is hot enough), add your steaks. Cook about 5 minutes per side (for medium ish). I used a screen over it because it did pop a lot. While that is cooking, chop a small hand full of parsley for garnish at the end. Once cooked to your preference, remove to a plate to rest while you make the garlic butter.
In a medium (8”) skillet, melt 4 tbsp butter over low heat. Add the garlic, swirling around often so the garlic doesn’t burn, till it’s a nice golden brown (about 4 minutes). Lightly salt to taste.
To serve, slice the steaks, top with garlic butter, sprinkle with parsley, and then give a good spoonful of potatoes on the side. Enjoy!
